PA Law 113, enacted in 2011, allowed micro-distilleries such as BIG SPRING SPIRITS to produce a maximum of 100,000 proof gallons of spirits. The law further stipulated that distilleries could, in their tasting rooms, sell bottled spirits and cocktails, using only spirits produced on site. Initially this seemed limiting, however upon introspection, this very limitation forced us to develop a variety of mixers otherwise purchased off the shelf. In requiring us to develop faux flavors, our tasting room creative types looked deeper into routine mixers; origin of bases, availability of herbs and spices, recipes. That which originally seemed a snag, turned out to be just the kick we needed to develop ingredients that were more to our tastes..
So for the 3 years, we have enthusiastically mixed our spirits with familiar and bizarre ingredients utilizing only spirits from the distillery. But in June 2016, another bill was signed into law allowing distilleries to also serve wines and beers approved by the Commonwealth and as a result we have expanding our offerings. BIG SPRING SPIRITS now provides special libations produced outside of our distillery with special attention to local craft beer and wines that we find worthy of serving to our clientele and that work well as components in our cocktails.
